The ingredients needed to make Chicken Broccoli:
  1. Prepare 2 Chicken breast
  2. Take 1 lb Fresh Broccoli
  3. Make ready 4 cloves Garlic
  4. Take 1 tbsp Cornstarch

  6. Make ready 1 cup Sliced Mushrooms (optional)
  7. Prepare 1 cup Cashew nuts (optional)

  10. Get 1 tbsp Minced Garlic
  11. Take 1 tbsp Sliced Julienne Ginger
  12. Prepare 2 tbsp Rice Wine
  13. Make ready 3 tbsp White/Brown Sugar
  14. Make ready 2 cups Chicken Stock (OR 1 Chicken Knorr Cube diluted in lukewarm water)
  15. Take 3 tbsp Soy Sauce
  16. Get 2 tbsp Hoisin Sauce
  17. Get 3 tbsp Oyster Sauce
  18. Take 2 pcs Scallions
Instructions to make Chicken Broccoli:
  1. First, cut the chicken breasts into thin slices then place them in a bowl. Then season it with salt, black pepper, and 2 table spoons of sesame oil, 4 cloves of garlic purée, then add a bit of cornstarch. Mix well then set aside to marinade.
  2. Next, cut your broccoli into florets. Then have it blanched with a pinch of salt for 40-50 secs. Once done, strain it, and transfer to a bowl of cold water with ice.
  3. Next, to make the brown sauce, take a new cooking pot and add some sesame oil followed by garlic, ginger, then sauté. Then add the rice wine, sugar, and have it caramelised well before adding the chick stock. Mix well. Then add in the soy sauce, hoisin sauce, oyster sauce. Stir. Add black pepper, scallion, and then cornstarch mixture (cornstarch+water). Mix well until the sauce thickens.
  4. Then, in low heat, add in the cooked chicken breast slices.
  5. Add the broccoli florets.
  6. Add in the mushrooms, peanuts, and cashew nuts. (Optional)
