  2. Rinse and pat dry your pernil and place into a large baking pan……..
  3. Cut slits into top and bottom of pernil with a large sharp knife……
  4. Coat pernil with combined ingredients, making sure you get ingredients into slits on top and bottom of pernil…..
  5. Cover and let pernil marinate for at least 24 hours in refrigerator……..
  6. Place pernil, covered with aluminum foil, in a preheated 325 degree oven and bake for 5-6 hours…….
  7. For the last hour to two hours of cooking uncover pernil and cook until skin is golden brown and crusty……..Remove from oven, let rest for about 20-30 minutes, slice, serve and enjoy 😉!
